We have chosen to share some of our cherished family photos. Some are Native Americans, other descended from the original settlers of Schenectady, New York. They arrived shortly after the landing at Plymouth Rock in the 1600's. They were patriots during the Revolutionary War and we are patriots today. In the 1800's some were born in Indian Territory; others were pioneers who came to Oklahoma by canoe, in covered wagons, on horseback and by train.

From the time we were small children, we have eaten some of the finest beef in the world. We learned about great food from our family and dining experiences around the world. We learned about beef from our grandfather, a true gentleman who bred Herefords in Oklahoma 50 years ago. Later, we bred Limousine.
Three major factors affect the tenderness of beef. One is the U.S. Department of Agriculture (USDA) grade for quality. USDA graders grade beef for quality according to standards established by the USDA. Grades are based on the amount of marbling (flecks in fat within the lean) and the age of the animal. These quality grades are an indication of tenderness, juiciness and flavor. The top three grades available to most restaurants are: USDA Prime, USDA Choice and USDA Select. only 2% of all beef is graded USDA Prime. At Pemberton's we serve the top of the top, USDA Prime.
The second factor is the time the beef is aged. Optimally aged beef is more flavorful and tender than non-aged or under-aged beef. Aging is not related to the age of the animal. It is the time between the slaughter and cooking.
The third factor is cooking. Our steaks are charbroiled over radiant heat and delivered to your table just the way you like them!
HOW DO YOU LIKE YOUR STEAK? We like ours rare (cool red center). Tell us how you like yours. We will serve it just that way. Medium rare (warm red center); Medium (pink throughout). We are not responsible for steaks cooked Medium Well (thin line of pink) or Well Done (dry, no pink).
We are here to serve you not only great beef, but also a variety of palate pleasing entrees while you are surrounded by family.
In addition to our regular seating (5 pm Wednesday-Saturday), the dining room and lounge are available for bookings and social luncheons and other special events. We offer designer cakes and desserts for anniversaries, birthdays, bridal and baby showers, graduations, reunions, retirements, rehearsal dinners, weddings and other special events. Chef Zach will work with you to plan your menu.
